We really hope you have some Memorial Day leftovers this week, because this quesadilla recipe is a breeze to throw together. The ingredients are extremely flexible, so we&#8217;re not including specific amounts &#8211; use whatever you have on hand, like salsa, guacamole, salad, etc! Of course, you don&#8217;t <em>have<\/em> to use leftovers, but for some reason they just taste better, no?<\/p>\n<h3>Ingredients<\/h3>\n<ul>\n<li>flour tortillas<\/li>\n<li>leftover grilled chicken, pork, beef, fish, tofu or veggies<\/li>\n<li>cheese<\/li>\n<li>cilantro<\/li>\n<li>jalepenos<\/li>\n<\/ul>\n<h3>Directions<\/h3>\n<ol>\n<li>Arrange the tortillas on a work surface and divide the chicken, cheese, cilantro, and jalape\u00f1o among the bottom halves of each.<\/li>\n<li>Sprinkle with salt and drizzle each with a tablespoon of barbecue sauce.<\/li>\n<li>Fold the uncovered tortilla over the filling to form a half moon shape.<\/li>\n<li>Heat a large flat griddle pan over medium heat.<\/li>\n<li>Place 2 quesadillas on the griddle.<\/li>\n<li>Cook for about 3 minutes on each side, or until the tortilla is crisp and golden and the cheese has melted.<\/li>\n<li>Transfer the quesadillas to a baking sheet and keep them warm in the oven.<\/li>\n<li>Repeat with the remaining 2 quesadillas.<\/li>\n<li>Cut the quesadillas into wedges and serve.<\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"<div class=\"mh-excerpt\">Photo and directions courtesy of Curtis Stone When it comes to the smells of summer, a charred piece of meat on the barbie&#8217; tops the list!
