Save the Leftovers!
Thanksgiving has come and gone, but the festivities are still in full swing! Lots of us are still taking advantage of the long weekend with shopping, spending time with those we love, and more feasting! If you have leftovers from last night but need a fabulous “new” dish to whip up for another complete meal, try this Asian-inspired pasta dish! It uses leftover poultry and cucumbers, or any raw veggies you want to toss in, and guarantees a unique and light dressing that is just what your tastebuds are craving after those heavy eats!
Turkey Pasta Salad

Ingredients
Dressing:- 1/3 cup soy sauce
- 1/3 cup rice vinegar
- 3 tablespoons white sugar
- 1/2 teaspoon ground ginger
- 1/2 teaspoon black pepper
- 1/2 cup light olive oil
- 1 teaspoon sesame oil
- 1 box (1 lb) dry pasta (any shape)
- 3 cups shredded chicken or turkey
- 2 large cucumbers, seeded and thinly sliced
- 1/2 cup chopped cilantro
- 1/2 cup chopped scallion
- 1/4 cup toasted sesame seeds
Instructions
- Whisk all of the dressing ingredients together and set aside. (I usually do this the night before just to get it out of the way.)
- Cook pasta as instructed on the box. Drain and rinse with cold water. Set aside.
- Toss together pasta, chicken or turkey (is using), cucumber, cilantro, scallion, and sesame seeds. Dress and toss. Serve immediately.
